Stuffed Rabbit Roast

This elegant stuffed rabbit roast is a true centerpiece meal. Tender boneless rabbit is filled with savory prosciutto, creamy fontal cheese, fresh greens, and Parmigiano Reggiano, then carefully wrapped in hickory smoked bacon. Roasted on a bed of chopped potatoes and finished with fragrant fresh rosemary, this dish is rich, comforting, and perfect for special gatherings.

Ingredients

  • Boneless Rabbit Saddle
  • Prosciutto slices
  • Fontal cheese, sliced
  • Fresh greens such as spinach or arugula
  • Parmigiano Reggiano, grated
  • Hickory smoked bacon slices
  • Chopped potatoes
  • Fresh Rosemary
  • Salt & Pepper to taste

Instructions

1) Preheat oven to 350 degrees.

2) Lay the boneless rabbit flat and layer with prosciutto, fontal cheese, fresh greens, and Parmigiano Reggiano.

3) Roll the rabbit tightly and wrap securely with hickory smoked bacon.

4) Place the wrapped rabbit on a bed of chopped potatoes in a roasting pan. Season with salt, pepper, and rosemary.

5) Bake for approximately 20 minutes per pound or until the internal temperature reaches 160 degrees.

Let rest for a few minutes before slicing and serving.

Creamy Rabbit Ramen

This simple recipe is a family favorite that is bound to win over your family too. If you’re looking for a comforting, budget friendly meal, this one’s ideal for you!

Ingredients

  • Rabbit cuts of your choice
  • 5 oz baby Bella mushrooms, sliced
  • 1 1/2 cups vegetable broth
  • 1 handful fresh Kale
  • 1 package ramen noodles, seasoning discarded
  • 1/2 coconut milk
  • 1/2 tsp olive oil

Cooking Instructions
1) Slice the rabbit and mushrooms, then sauté them in olive oil over medium heat until the meat is white and the mushrooms are soft and dark.
2)Add the broth and bring to a boil. Once boiling, add the ramen noodles (without the seasoning packet) and cook for about three minutes, or until tender.
3)Turn off the heat and stir in a handful of fresh spinach until wilted (about a minute). Add the coconut milk, stir to combine, and serve warm.

Shredded Rabbit

Enjoy lunch time with a quick rabbit dish that’s both flavorful and nutritious. Marinated in a zesty blend of lemon, garlic, and rosemary, the rabbit cooks to tender shredding perfection. Serve it with a fresh mix of greens, chopped cucumbers, olives, goat cheese, and a light vinaigrette for a well-rounded and delicious meal.

  • Sliced Olives
  • Goat Cheese
  • Light Vinaigrette
  • Salt & Pepper to taste

Cooking Instructions

1) Marinate the rabbit in lemon, garlic, rosemary, olive oil, salt , and pepper for at least an hour.

2) Cook the rabbit in a covered pan over low heat until tender and easy to shred.

3) Shred meat and serve over mixed greens with cucumbers, olives, goat cheese crumbles, and a light vinaigrette.

Rabbit Saddle Stew

This hearty rabbit saddle stew is perfect for slow Sundays and chilly evenings. It is easy to prepare, warm, comforting, and full of rich flavor that slowly develops as it cooks.

Ingredients

  • Rabbit Saddle
  • Potatoes, chopped
  • Bell peppers, chopped
  • Garlic, minced
  • Onion, chopped
  • Jalapeños, sliced
  • Fresh Rosemary
  • Chicken Broth
  • Salt & Pepper to taste

Cooking Instructions

1) Place the chopped vegetables into the slow cooker.

2) Add the rabbit saddle on top and pour in enough broth to cover.

3) Add rosemary, salt, and pepper.

4) Cover and cook on low for about 2 1/2 hours or until the rabbit is tender and the vegetables are soft.

Serve warm.

Quick & Easy Rabbit Dumplings

This quick and cozy recipe is perfect for busy nights and toddler friendly meals. It truly feels like cheating when supper comes together this easily, but the comfort and flavor are always there.

Ingredients

  • Rabbit cuts (Thighs & Belly Flaps are our favorites)
  • Chicken Broth
  • Celery, sliced
  • canned biscuits
  • baby carrots (optional)
  • Salt & Pepper to taste

Cooking Instructions

1) Cut the rabbit belly flaps into small pieces and sear in a pot until cooked through.

2) Pour in chicken broth and simmer until the rabbit is tender.

3) Tear or pinch the canned biscuits into small pieces and drop into the pot.

4) Add sliced celery and optional baby carrots.

5) Season with salt and pepper and simmer until the dumplings are cooked through. Enjoy your delicious food!
